Scallop carpaccio with yuzu vinaigrette, umeboshi and red shiso powder

Frayed raw squid, quail egg, Royal Oscietra caviar, crispy vegetables and soba dashi sauce

Ise ebi tempura and misoshiru
Lobster tempura and miso soup

Toshikoshi soba with abalone
Traditional buckwheat soba with dashi broth, abalone, yuzu zest, chives and tempura flakes

Unagi sumibiyaki
Cooked on embers eel, foie gras and white turnip

Wagyu sukiyaki
Noble Japanese beef (Yamaguchi, A5) slowly cooked on soy sauce and poached egg

Pistachio, yogurt and raspberry 
Pistachio bavarese, yogurt cream and raspberry sorbet

Tasting menu 250 euro per person, drinks not included
